  • 1 cup Cauliflower florets (Gobi)
  • 1 medium Carrot, sliced (Gajar)
  • 1/2 cup Green Peas (Matar)
  • 1/2 cup French Beans, chopped
  • 2 medium Potatoes, cubed (Aloo)
  • 100g Paneer cubes (Optional)
  • 2 medium Onions, finely chopped
  • 2 Tomatoes, pureed
  • 1 tbsp Ginger-Garlic paste
  • Spices: Turmeric, Red Chili powder, Garam Masala, Salt
  • 2 tbsp Fresh Cream or Malai
  • Fresh Coriander leaves for garnish

Recipe Instructions: Step 1: Wash and chop all the vegetables into equal-sized pieces. Step 2: Heat 2 tablespoons of oil in a pan and sauté cauliflower, carrots, and beans for 5 minutes until slightly tender. Set them aside. Step 3: In the same pan, add cumin seeds and onions. Sauté until golden brown, then add ginger-garlic paste. Step 4: Pour in the tomato puree and add all the dry spices. Cook until the oil starts separating from the masala. Step 5: Add the sautéed vegetables and 1/2 cup of water. Cover and cook on low flame for 8-10 minutes. Step 6: Finally, add paneer and fresh cream. Mix gently and garnish with fresh coriander. Serve hot with Naan or Roti.
