Recipe Ingredients:
- 1 cup Cauliflower florets (Gobi)
- 1 medium Carrot, sliced (Gajar)
- 1/2 cup Green Peas (Matar)
- 1/2 cup French Beans, chopped
- 2 medium Potatoes, cubed (Aloo)
- 100g Paneer cubes (Optional)
- 2 medium Onions, finely chopped
- 2 Tomatoes, pureed
- 1 tbsp Ginger-Garlic paste
- Spices: Turmeric, Red Chili powder, Garam Masala, Salt
- 2 tbsp Fresh Cream or Malai
- Fresh Coriander leaves for garnish
Recipe Instructions: Step 1: Wash and chop all the vegetables into equal-sized pieces. Step 2: Heat 2 tablespoons of oil in a pan and sauté cauliflower, carrots, and beans for 5 minutes until slightly tender. Set them aside. Step 3: In the same pan, add cumin seeds and onions. Sauté until golden brown, then add ginger-garlic paste. Step 4: Pour in the tomato puree and add all the dry spices. Cook until the oil starts separating from the masala. Step 5: Add the sautéed vegetables and 1/2 cup of water. Cover and cook on low flame for 8-10 minutes. Step 6: Finally, add paneer and fresh cream. Mix gently and garnish with fresh coriander. Serve hot with Naan or Roti.

Ingredients :-
1– 5 tsp oil (custard oil)
2– 1 tsp cumin seeds
3– 2 medium-sized onions, finely chopped
4– 1 or 2 tomatoes, finely chopped
5– 2 garlic cloves, finely chopped
6– Some ginger, grated
7– 1 tsp turmeric powder
8– Red chilli powder (according to taste)
9– 2 tsp garam masala
10– 1 tsp ground coriander
11– 1 small coarsely ground coriander
12– Salt (to taste)
13– 2 cups mixed vegetables (carrots, peas, potatoes, masala, cauliflower, whole chillies or vegetables of your choice)
14– 1 cup water or vegetable broth
15– 2 large sprigs fresh coriander, chopped
16– 1 large lemon juice (optional)

Directions to make Mix Veg Recipe :-
1. Heat the oil:- Heat oil (custard oil) in a large pan. Heat the oil, then add cumin seeds and let them crackle.
2. Saute the onion:- Add chopped onion and sauté until golden brown. It will take about 5-10 minutes. Then, add garlic and ginger and cook for 2 minutes until it crackles.
3. Add tomatoes and spices :- Add chopped tomatoes and cook till they become soft and mushy. Now, add turmeric, red chili powder, garam masala, ground coriander, half cup water and mix everything well. Let the spices cook for 2-5 minutes, cook all these mixture till the spices leave oil.
4. Use mixed vegetables :- Add the mixed vegetables to the pan. Stir well to mix them with the spice mixture.
5. Cook with water :- Add one and half cup of water or vegetable broth then stir everything together. After this cover the pan and cook for 10-15 minutes till the vegetables become soft. You can check the cooking status of the vegetables in between and add some more water if needed. If the amount of water in your vegetable is less.
6. Garnish the vegetables nicely:- After the vegetables are cooked, check the salt and add chopped coriander for freshness. If you want, you can squeeze some lemon juice on the curry to enhance the taste.

7. Serve :- Serve the Mixed Vegetable Curry hot with rice, naan, roti or puri. At this point you can also have a fresh chopped salad to enhance the taste.
